Follow your Senses

Feast your eyes on the uncountable shades of Dominica's green. From your cabin, every morning starts with a view of the mountain ridge as it meets the sea. You can watch the hawk's make passes of the valley and we are also proud to report the return of parrots to the mountains on both sides of us. Bird watchers are astounded by the inventory of hummingbirds coming within view of the veranda. In Dominica the rainbows come in all shapes and sizes, some even two at a time. In our corner we get to see sunsets with dreamy afterglow and moonsets burning red right down to the sea. The nighttime sky is unpolluted by light and we have a telescope available for moon gazing.   

At Crescent Moon Cabins we indulge in the aromatherapy of various botanicals and have surrounded the property with our favorites such as the famous West Indian Bay, Ylang-Ylang, and Frangipani. We also use aromatics in the greenhouse as an organic defense and distill the foliage for essential oils.
The scent that mesmerizes most of our guests, however, is the wafting aroma of roasting coffee in the mornings.
We heat the green beans one pound at a time over an open flame and use a hand mill to grind. It is a slow roast and small batch approach to making the freshest cup of coffee. Connoisseurs will appreciate the conditions in which it is grown and the simplicity of the method. You are welcome to participate in the process or purchase some to bring home.

Taste, of course, is our specialty. With a growing collection of culinary herbs the possibilities of cuisine are endless. For meal preparation, which starts, in the traditional fashion, in early afternoon, you will catch the chef foraging the gardens for that perfect bouquet of spices. Rosemary bread with homegrown and sun dried tomatoes turn our bread into a delicacy in itself. Crisp cinnamon bark and grated, just unearthed, ginger and turmeric is what makes the pumpkin soup like no other. The chicken or tofu bathed in white wine and tarragon makes the mouth water as it is festively presented on the plate.
Even in the rising moon we are pulling leaves for the evening's bush tea from the garden. Bush tea is a traditional secret to peace and longevity for Dominicans. We appreciate the wisdom that is generously shared with respect to the soothing and healing powers of the plant world.

Listen to the chatter of the birds as they prepare themselves for the day. Sometimes you wonder what all the fuss is about and realize it is simply the announcement of another morning. Roosters, in the distance, are a reminder of the original pattern of time in the natural world. In Dominica time moves slow enough to think with pauses. Listen to the rain as it crosses the valley followed by the sound of rushing river. Herons call on the sunset. The night is a symphony of chirping frogs and pulsing crickets. You can  add a note! You are welcome to bring an instrument or pick up one of ours.

When was the last time you felt mud between your toes? Take a hot spring bath on the way back from the hike and apply a therapeutic mudpack. Feel the way mountain water makes your hair and skin soft again. Let the curves of the land contour your body and end the day with a stretch in a hammock. Remember the flavor of fresh air as you experience cool breezy nights. The hot bath with floating wild sage leaves is a rejuvenation for the muscles. We believe that health and beauty is in the bush, you just have to know where to look. Let us point you in the right direction.
